After last week's endeavor with the delish Teriyaki Black Angus Rice Bowl, I decided to see how a little recipe modification would work in light of not having any beef on hand. Enter my handy stash of organic chicken and a can of Dole crushed pineapple. Together with the same base ingredients of 5 minute rice and teriyaki sauce, they made a delicious alternative for the chicken fan in all of us. To achieve this recipe bliss, cook chicken in a manner similar to Angus strips, then top with warmed, drained crushed pineapple. Absolutely fabulous, easy still on the pocketbook, and makes for a pretty presentation. Enjoy!
